My mom’s best friend has the perfect term for food projects like these, she says “Is this FESTIVE FOOD?” Well of course this culinary project is! This dessert takes less than 15 minutes to prepare and everyone is delighted at the sight (then the taste)! Chocolate covered “carrots” for Easter?! Yes, please! Ok, Ok, they’re not really carrots, they’re strawberries dipped to the stem to look like fat little carrots. Here’s how you make ’em.
Begin with 1 cup of white chocolate chips, put them in a microwave safe bowl and microwave for 15 seconds at a time to ‘temper’ the chocolate. Stirring after each warming!
Next, add a few drops of orange food coloring, making sure to add enough to get your desired color (we like a bright orange!) Dip 8 medium sized berries in the “orange” chocolate, making sure to cover the top of the strawberry (keep the stem exposed like a carrot top!)
If there is chocolate left over, drizzle it either with a fork (or squeezed from a ziploc sandwich bag with a tiny little cut on the corner of the bag) over the top in an irregular pattern to add a little extra style!
1 cup yields 8 covered berries, and serves 4..! 2 each you see!
This recipe will be quite a hit…if you want to go the extra mile, serve them on a bed of crushed up chocolate wafers (simulating garden soil and carrots!)
